I do believe in the fundamentals of music and ultimately, no matter what you hear, learning music is not re-inventing the wheel. There is technique, reading music and understanding the basics of how the particular instrument works. Early on, I'll ask most students to play a recording of one of their favorite songs, which we'll use to improvise to as well as for ear-training purposes. I like to focus on intonation heavily, as anything other than excellent intonation is not good playing, in the words of a former instructor.
