I will start my beginner piano lessons with "Teaching Little Fingers to Play" "John Thompson's Easiest Piano Course Part I." Basic music theory such as determining lines spaces (Every Good Boy Deserves Fudge F.A.C.E) and basic 1-5 fingering patterns. I always introduce my students, no matter the age, to the Vaccai Vocal Methods book. This book has many exercises that takes the singer through all of the facets of their voice, and helps them hone their skills. I do this because I've seen it help students learn what they want to and need to learn faster as well as help students learn to like, love, or at least appreciate new things. The main point here is that every student is complex, difficult, and hard insomuch as teaching method required, but my passion is so great that I don't see issues or problems but rather new opportunities to get students excited about learning and demonstrating what they've learned.
