Teaching voice is something that I believe requires highly personalized lesson plans, and so there are books for which to acquire basic theory, note-reading, and sight-singing, but usually, lessons must be repertoire based, and conceptual. Students usually have an idea of certain songs they would like to learn, and I believe it is very important to enable them to sing what they like to sing. Fabers Piano Adventures or any variety of the Faber books with a theory book is often used so that students will have a firm foundation on how music works. Generally, I like to discuss what kind of music the students are interested in studying first. Then, after vocalizing and assessing the voice, I'll start the students with English art songs or 24 Italian Songs Arias, or some classic music theater repertoire. I was hooked and for my Girl Scout Gold Award in high school, I ran a theater company for children of social service recipients.
