My teaching method books involve All for Strings and Suzuki books. Suzuki books are categorized from level 1-10, level 8-10 is the equivalent of college level repertoire. I currently have students on level 1-8. In addition, I also look for individual method books and outside repertoire of Suzuki once the student is ready to move at a faster pace or in need of additional help. I like to make the music fun with songs that children like and then have other books with the basics. For adults I like to start with folk songs, classical music, and showtunes. If you can play scales well, then you're off to a good start! You may very well be able to learn new music faster and play the pieces better!
