I encourage this by not only setting realistic goals for my students at each lesson and making sure we achieve that, but also by adding, from time to time, interesting notes about the history of music or composer's biography to captivate the students' imagination. If the student has been playing their instrument without lessons I investigate what sounds and styles they apparently are drawn to and consider that when planning lessons.
