Books I use for teaching Piano is the Piano Adventures series of books by Nancy and Randall Faber, which is a great lesson book and a good basic piano method for beginners through intermediate level students. For guitar I use the Hal Leonard Incredible Chord Finder and the Warren Nunes Jazz guitar Rhythm and Background Chords and the Solo Patterns book. Any time I teach, I make sure to plan every lesson so that the student(s) can progress as far as possible every time they are learning with me. With school-age students, I use the Orff Schulwerk approach often, incorporating their own ideas into the lesson and having them learn through various senses (imagery, movement, games, etc.).
