Usually, I ask students if they are DYING to learn a piece, and with that selection, I'll look for techniques that can be improved upon. For adults, I try to ask what they are interested in learning, and help gauge the technique into their learning. It is very important for me to adapt the teaching style to the character and abilities of the students. It is also important to focus on the weaknesses of the students and try to improve those parts as well.
