At the first lesson is just seeing where they are and what kind of music they would want to play(hymnal songs, gospel songs, soundtracks, opera, classical etc). Then at the beginning of each lesson would be theory(note recognition, counting, fingering etc). Then review on what they practiced for the week and if they are confident with the pieces add a few more songs.
