For beginning students, especially young children, I always use the Hal Leonard's Essential Elements Books 1-3. After some time, when the student has more of a grasp on the fundamentals and reading music, then I will bring in some basic solo repertoire and music of their choice (Disney, Star Wars, etc.) to inspire them to continue and feel motivated to learn. I use the McClosky Technique for vocal relxation when teaching voice. This is a hands on method stressing easy singing and designed not to damage voices. On guitar I stress music theory and basic technique to allow the student to develop his or her own style.
