Once the student has progressed and shows some motivation to be slightly challenged, I'll introduce "popular" music so that the student feels a sense of accomplishment! No matter which direction my students go, I always try to make sure they're having fun with the music and being able to play their instrument. Because otherwise, the music won't come out the same way without having that extra feeling put into it. I typically start woodwind students with the Standard of Excellence Comprehensive Band Method series. I like to use the Faber Piano Adventures Series or the Alfred's Basic Adult Piano Course for piano instruction. In addition to the method book, I like to incorporate physical/breathing exercises, supplemental warm-ups, sight-reading, music theory worksheets, and student selected repertoire in lessons. I also encourage students to create their own compositions.
