For beginning students I usually start with Essential Elements 2000 for strings because it helps them get familiarized with the notes on the music staff even when they don't have any music theory knowledge. I also like to use Suzuki as they progress with the instrument and know the essentials like how to hold the instrument properly and how to hold the bow properly. For me it is essential that a student learn first all the techniques exercises and then start to create music. First lesson I start by assessing what level the student is at and what goals they have with their music and develop a lesson plan from there. I focus first on fundamentals of sound and technique to build a foundation for the student then work on scales and repertoire to get them playing music. From there it is a focus on musicality and performance.
