For adults, I try to find out what the student is interested in, and guide my instruction accordingly to keep the lessons engaging and fun, no matter their ability level. From my experience, the Piano Adventures series aligns well this goal while providing engaging, fun material for children. After completing a series of method books, I start to focus on classical repertoire.
