Also, I encourage transcribing music in small sections, and to always start slow and take deep breaths, as this will reduce the student's normal anxiety and has done wonders in my own playing as well. I typically begin by teaching a very simple chord progression to a popular rock song, and by changing the strumming pattern, it's 2 songs in 1.
