I typically start each student off on a series of lesson books to help structure their learning in an academic way. However, I highly encourage bringing in classical pieces and students picking pieces of their own and bringing them to me to go over and learn. I usually start with a beginners book for children or adults.  We go through the lessons at their own speed.  As for practicing the scales, I do not introduce them until the students is thoroughly familiar with the keys (the alphabet of the keys.)  For adults I introduce the scales and arpeggios much earlier.
