I encourage students to bring songs that they are interested in learning, and also provide plenty of material to get them on their way to undersanding how to navigate both their instrument, and music. In keeping with that, once the student is at an appropriate level, I assign a piece that will take a bit more work to master. Beginning piano students have used The Music Tree series. The format provides excellent reading skills and develops tonal memory and theory. Clarinet for Beginners by Avrahm Galper is the method book that has given students a foundation for whatever level they aspire to achieve. Students are encouraged to tell me what they would like to play. Overcoming performance anxiety is an important skill.
