For children and other beginners, I would start our lessons by encoding the basic function of music theory application of a drum pad. This will allow stick control and muscle memory to begin developing. As the beginner becomes more of a novice, I will introduce simple and repetitive songs and go over them as whole pieces. My student, no matter what age, starts with light vocalizing, lip trills, humming etc. for young students I usually pick a light song and work on basics using the song as an exercise.
