I think it's important to consistently accomplish small goals in order to raise one's self esteem and motivation to practice the instrument. I put a strong emphasis on listening, reading, writing, improvisation, and playing with others. Students who are new to the instrument will be introduced to the fundamentals of the guitar. I encourage this by setting realistic goals for my students at each lesson. Acknowledging accomplishments helps fuel a students desire to progress, and makes students eager to learn more. I always begin a lesson with having the student play a song/piece of their choice, so that they can feel confident and comfortable in their own skin and in the lesson space. For wind instruments, long tones and scales will occur at the beginning of the lesson, and will be followed by study of an etude and/or piece of repertoire.
