For younger students I start with showcasing what they can achieve with practice and perseverance. I do that by showing my playing. Then we start with the chromatic scale so the fingers can get use to the strings and moving around the fretboard. Same with drums but we start with easy hits and patterns. Books I use for teaching Piano is the Piano Adventures series of books by Nancy and Randall Faber, which is a great lesson book and a good basic piano method for beginners through intermediate level students. For guitar I use the Hal Leonard Incredible Chord Finder and the Warren Nunes Jazz guitar Rhythm and Background Chords and the Solo Patterns book.
