I like to start my lessons from the very beginning which is tuning the instrument, so that the instrument sounds good. To me music is about 10% technicality and 90% feeling. I first talk with my students to figure out their goals. Once a reasonable goal has been agreed upon, I enthusiastically help them jump right into playing their instrument. By breaking up portions of the lesson with review of simpler pieces, I encourage my students to play fun and simpler things as well, so that they do not beocme frustrated.
