Listening! I want to hear from the student why they're excited to play the instrument, in my case learn how to sing or play guitar. Every person and thus every student will be different. Some people find certain things easier or harder than others, so even if say I were teaching say two students of the same ability or progress level I wouldn't just give them excercises out of a book I'd customize the lessons so they could develop and build upon their currentskill level. For piano- I teach out of several method books- Faber, Bastein, John Thompson and Alfred's. I also implement Dozen a Day for piano technique and Hanon and scales. I use Czerny for the intermediate student. For voice- I work to build a solid understanding of breath, posture, vowel sounds and shapes, singing legato, etc. I believe a classical technique in both instruments is the best foundation for growth into any style. They do an excellent job formatting their age-appropriate materials to students and get them playing and learning to read music early on in the learning. For voice, I devise my own warm up exercises that tailor to the needs of the student.
