For a young 11 year old beginner, homework assignments will begin with the instrument itself, and then eventually Book One of any method book desired. Popular practice dictates good results with books like Yamaha and Standard of Excellence. For middle-level ability (middle school / early high school), the Rubank series is perfect. I like to teach without books as much as possible as I feel it allows the student to internalize musical concepts better. The book series I use however is the Rubank method books. These have easy fundamental exercises to help keep the chops in shape and to work on reading music. I started teaching private lessons in college, about four or five years ago. I have taken students on several different instruments, mainly saxophone, piano and guitar. I find that it is important to encourage students to play and practice the type of music they enjoy, and to have fun performing and learning.
