I use Alfred's: lesson book, theory book, technique book, notespeller booke, and recital book. I usually make sure to include recital book as we are going to start our first recital this year. I love to see my students overcome challenges in music. My music teacher used to say, "nothing is hard, or difficult, just challenging." If students learn how to practice effectively on their own, learning new music becomes easier over time. I teach my students how to approach a certain rhythm, phrase, or fingering and the techniques to do so correctly such as by slowing down and practicing with a metronome, our muscle memory will be able to play it up to speed once it's learned. My teaching methods vary depending on the student's needs and musical knowledge. Normally starting with general repertoire before expanding into different genres in order to obtain a feel for each person's skill or level of understanding. If they are younger, I tend to lean towards the more conventional approach with the Bastien Piano Basics or Piano Adventures for them to grow in the fundamentals.
