For older or more intermediate students, I recommend Faber Faber's Piano Adventures, which incorporates not only interesting musical selections, but also introduces music theory and analysis. For advanced students, I prefer to piece together selected repertoires based on music relevant to their interests; this typically includes a selection of classical and contemporary compositions with some discussion of the pieces' context within a greater scope of music history and theory. This means that I take into account the frustration that learning a new instrument can entail, and use therapeutic techniques to make sure my students are regulated during these moments of frustration. I provide structure and guidance for my students, but give them opportunities for free exploration, decision making, and leadership throughout a lesson. During the lessons, I start with scales, technical exercise, and then solo repertoire. My methods are largely based on learning the basics of theory and how to apply it intuitively in music (no matter what genre). I teach this at a patient pace, with teaching diatonic scales first, then transcending those scales into arpeggiated patterns.
