Even though I am a jazz trombonist, I focus on finding music that students like, not that I personally want to play. As for beginners, I would recommend Hal Leonard’s Essential Elements-Flute, Book 1. For more experienced players, I would recommend De la Sonorité and 24 Progressive Studies for Flute, along with the Trevor Wye Practice Books. More specifically, we would focus on the Tone, Technique, and Breathing and Scales books. As the student moves forward, we can have a more detailed discussion about solo works.
