For younger students I usually recommend a method book or I make copies from my own library for the student.  I usually will teach fundamentals through a book, but I always look for opportunities to convey musical principles in a more natural way, and especially for kids, fun is the most important method there is.  Often times a student will stumble upon something interesting unintentionally and I use these moments to teach, because it both encourages them to recognize their natural talent and helps the student to make connections from their limited technical skills to greater conceptual knowledge. For beginner that are children ... I use "Excellence in Theory" by Ryan Nowlin Bruce Pearson ... to cover music theory and ear training. After completion of this work I move the student to Bela Bartok's MikroCosmos Volume 1 or other available method books. I also come up with materials of my own from time to time ... each student is different ... so I take the approach of learning the student as I work with them ... with the idea that I will tailor the education to work best for the student! My preferred piano method is Piano Adventures and I recommend using the Lesson, Theory, and Sight Reading books at each level. For guitar and voice I typically do not follow any specific method unless the student has a preference. For more advance piano students I typically will begin using Suzuki or move them to Burgmller Etudes and Schumann's Opus 68 - Album for the Young.
