When taking on beginner students, I typically use a blend of method books and novice musical pieces to begin to build musicianship. With intermediate musicians, I tend to seek out anything of interet to the student while incorporating harder repertoire to strengthen musicianship and to continue to peek interest in music. Most of the modern ones are pretty good to get students started, so I'm fine sticking to the director's method of choice and gleaning all the musical gems we can from it.
