I always make sure that each lesson incorporates a mixture of technical work specific to the clarinet, scales, note and rhythm reading, basic clarinet repertoire, well known pieces, unknown pieces and sight reading. After a few months, I begin adding solo repertoire that is appropriate for age and ability. For middle school age students and adults, I start with Alfred's Basic Piano, Adult, Level 1.
