For beginning student, I usually start with Suzuki Violin School. This is a pretty good methods for student to begin their violin life. There are many etudes like Wohlfahrt's 60 Studies For the Violin, Mazas' 30 Etudes Speciales and so on, I will make their individual plan introduce the Etude which fit them the best to my student to make progress on performance skill efficiently. My past students would probably say I am overall a nice guy but incredibly picky when it comes to perfecting a piece and hold each of my students to a very high standard.
