For beginning piano students, I usually employ the Faber or Alfred Series books. They are intuitive and the various books (Lesson, Theory, Technique, Performance, etc) complement each other well! They also have an "older beginner" series that is great for teens and adults that are new to piano. I also encourage my students to try composition, even if it is very simple melodies. I start each student with the Frances Clark Series. This is terrific in introducing all musical components to the learner. It starts off right away using ALL the notes on the piano. Black notes are used exclusively in some repertoire. Each building block is built upon the next and it just nicely adds , in a non-threatening way to what the student has learned before. With young students, I also prepare fun games and activities that will help them become acquainted with the keys on the piano. As the student progresses, I find and introduce new repertoire that is appropriate for their skill level.
