I just recently graduated from the University of Alabama in early May with a Bachelor of Music Degree in Piano Performance. I have been studying piano for almost twelve years. In my school years, I participated in band where I learned the technical aspects of music such as reading and writing notation. I have experience both with written music and tabs, so student preference will determine which route to take. I've always found lessons to be more effective when instructors utilized the song method; to me, introducing elements of theory through this method makes the information "stickier."
