I find that building a personal plan with each student helps in building and maintaining the student's interest in continuing to learn. for beginners, as well as younger students, I start with showing the student how to hold and get sound from the instrument. In my teaching I make sure that my students never feel overwhelmed or confused by the material.  I give them reasonable assignments based on their skill level and make sure to give them reasons for everything they are doing.  I always try to help my students achieve little accomplishments in every lesson.
