It's important to move at the student's pace - whatever speed that may be. It's important to build a solid foundation but that doesn't necessarily mean mastery or perfection. It's easy to lose interest if stuck on one piece to long so we'll move through the material as quickly or as slowly as the student desires as long as the foundation is there. I also know that you get out of lessons what you put into them so I require that students practice at home in addition to their weekly lessons. I did some coaching for several years at middle schools and high schools. After that I bought a lot a wind instruments and started to teach wind instruments privately. I use All for Strings, Suzuki, Klengel (scales) at the beginning level. I proceed to Concerto repertoire, Popper, Dotzauer etc. The usual classical repertoire. I will also transcribe popular pieces or pieces that the student enjoys to really increase motivation. I also test weekly to inform students of where their practice ability is at and what they need to improve on.
