For beginning students of any age I start out with basic open chords and how to switch between them. We'll eventually try out different picking patterns with these chords and some simple songs that utilize them. For more experienced students I will present some chords and scales and determine what level they are on and take it from there. I take into consideration adult responsibilities and what your goals are for their choice of study. I keep lesson plans a bit more loose depending on skill level and available practice time. I'll usually create a lesson plan that'll focus on all basic fundamentals that are goal-focused, while incorporating songs that'll help reinforce those mechanics! I like to keep lessons fun by bringing music that students enjoy. I also try to encourage and motivate my students to do that from an artistic point of view.
