Books I use for teaching Piano is the Piano Adventures series of books by Nancy and Randall Faber, which is a great lesson book and a good basic piano method for beginners through intermediate level students. For guitar I use the Hal Leonard Incredible Chord Finder and the Warren Nunes Jazz guitar Rhythm and Background Chords and the Solo Patterns book. My philosophy lies in structure - such as teaching in appropriate amounts that are challenging, but not overwhelming. I will always ask students what they're interested in learning and work that into the lesson. But the main focus for beginners is to be comfortable with the fretboard and to have fun.
