The way that I do this is by placing an emphasis on music the student enjoys, and by giving the student a fair amount of autonomy in choosing their repertoire they would like to learn. My main goal and teaching is to inspire self motivation and make it fun! I like to pick songs that are fun to play and challenging at the same time depending on what level you are at that time.
