For beginners of any age, I begin by discussing goals, milestones, and how we will achieve them. I do use method books, but only recommend those that will be useful in and out of lessons. I keep lessons fun and engaging, and always demonstrate before expecting the student to do the same. I learned some chords on Guitar from my hippy uncle. After a few weeks, I started teaching him, and he is 60 years old. Point is, he would listen to songs on the radio like songs from The Beatles and then teach me them. I have taught drums to kids as young as 5 to adults as "young" as 50 so far, and I love to adapt my ways of explaining the concepts depending on the age or personality of the student.
