For beginning students I prefer Hal Leonard's Essential Elements, but also work with any method book a student uses in their band class. Students will also work from the Peters/Yoder Master Theory Series. My methods are largely based on learning the basics of theory and how to apply it intuitively in music (no matter what genre). I teach this at a patient pace, with teaching diatonic scales first, then transcending those scales into arpeggiated patterns.
