As we work through the scales I'll have the student read short songs and excerpts from Hal Leonard's "Piano Adventures Performance" book. As the student grasps the fundamentals I will then assign level appropriate solo pieces for them to perform. Beginner drum students will follow the same model by starting with rudiments and the different pieces of the drum set/djembe. In terms of younger students who are first discvovering their interest in music, it is important to develop a basic foundation of understanding in terms of reading, writing, and communication with other musicians through the application of time tested teaching methods forcing the student to apply what they have learned in weekly "missions." If you're a beginner, you were put in a beginning class. this makes it very difficult for students to advance quickly because they aren't playing music with people who are more advanced than them. I make sure the students have the ability to play the instrument before they learn a ton of theory, because knowing how the wrritten form of music work without being able to play them is recipe for frustration.
