My methods vary on the student and subject. Beginning students will typically focus more on technical pieces of music to improve on certain aspects of a few pieces to perform. More advanced students will still practice technical parts of their music, but less time will be spent on it during a lesson. Advanced level students will spend more time on repertoire and performance. I have both a Bachelor of Music from the University of Oregon and a Master of Music from the University of Wyoming in Saxophone Performance. I like to use a wide variety of materials, from classical to jazz music.  CLARINET: For clarinet students, I use "standard" conservatory etude and scale books (such as the Rose Studies and Behrmann Studies).  I also use the Jamey Abersold Jazz Methods, which feature CD 'play-a-long' recordings of jazz music.  I also have my students perform a wide range of solo music, from 'standards' like the Mozart Clarinet Concerto to 20th century repertoire by composers like Bernstein, Copland and others.  I think it is important for students to be able to play jazz and improvise, so I teach them about Blues and how to play jazz, as well as classical music. Clarinet for Beginners by Avrahm Galper is the method book that has given students a foundation for whatever level they aspire to achieve. Students are encouraged to tell me what they would like to play. Overcoming performance anxiety is an important skill.
