I use different book series, depending on the age and level of the student. For young students, I start with the little Mozarts book series, lesson books, and workbooks. For older students, I will either use Bastien or Alfreds lesson and workbooks. This is mixed with a classical and folk book. We also work on theory, and making sure we know our intervals. If a student has never played violin before, I usually start out with a combination of the Suzuki method, the American Fiddle Method, and Jazz Fiddle Wizard to develop a holistic approach, comfortable with playing multiple styles, improvising, and playing both from sheet music and by ear from the very begginning.  After the fundamentals are grasped, I ask the student what he or she really wants to play, and we develop technique and theory based on his or her favorite songs. I use All for Strings, Suzuki, Klengel (scales) at the beginning level. I proceed to Concerto repertoire, Popper, Dotzauer etc. The usual classical repertoire. I will also transcribe popular pieces or pieces that the student enjoys to really increase motivation. I also test weekly to inform students of where their practice ability is at and what they need to improve on.
