I usually begin by working through the Suzuki method books, and then from there try to branch out into other material depending on the student's skill. I'm always open to trying different songs and even encourage my students to find songs that they want to play. Depending on the age and level of the student, there are a number of options to pick from, which allows me to get just the right fit! Along with the method book, I recommend what's called a blank TAB book which is used to write down chords, exercises and songs. I use a variety of methods for my teaching style. I usually have a few method books that I bring to a first lesson, and after meeting the student I will decide on the best one. Once the student has progressed and shows some motivation to be slightly challenged, I'll introduce "popular" music so that the student feels a sense of accomplishment!
