For beginner Piano / Keyboard Students, I use the Bastien Books. They are simple to understand and get the Student through the first few stages of Right Hand Left Hand coordination and positions. I have several different books for Saxophone Students that feature technique, solo repertoire and duets. My lessons will be pretty focused on music theory so that, in time, the student will be able to make their own music with ease. For new beginners, I'd likely ask which song they wanted to learn. And then I'd teach it to them, while also explaining scales, how to build chords, and the theory used in the song. Besides regular warmups and technical workouts, I encourage every student to transcribe, sing and play along with music they like. I do understand however that some (adults) only want to learn to play some songs for their own personal gain, and not have to mess around with note reading. (Guitar is an instrument that can be played by ear, and to some degrees at a high level.) To that I do not require any books.
