Everybody's experience with music is different and not everybody will pick things up as quickly as others so you must meet them where they are. Music is nerve-racking at first because expressing ourselves isn't something that is always encouraged so I look for something they are interested in to start off. I started teaching full time, at which point I added piano and speaking to my repertoire.
