More advanced students take their supplemental material from the Exploring Piano Classics series by Nancy Bachus. My band students use Hal Leonard's Essential Elements series and the Rubank Methods books (Beginner/Intermediate/Advanced for each instrument). I have most students start with Essential Elements for fundamentals.  Then I progress to solo and duet repertoire when the time a student is able to grasp counterpoint and rhythm well.  Adult students can often move faster due to being able to understand the math behind music.  I also try to incorporate theory and history and culture with my lessons. I believe that fundamentals, as outlined above, are crucial to master for a student to truly understand their instrument. When a solid foundation has been established, it is much easier to approach those more complicated concepts. It then allows everything that a student do to become easier and truly move forward in their learning at an accelerated pace.
