For beginning adult piano students, I use Alfred's Adult PIano Method. For the more advanced students, music is typically chosen from a variety of sources, so that the student is playing music that is challenging and enjoyable. I pay attention to the student's progress and once I feel they can move on to solo repertoire appropriate for recitals, I will move them down that path.
