After a few months, I begin adding solo repertoire that is appropriate for age and ability. For middle school age students and adults, I start with Alfred's Basic Piano, Adult, Level 1. The student listens and produces the best sound they can make after listening to me. My goal as a teacher is to help them become their own teacher and evaluate the things they can improve upon. This seems to progress at a very suitable speed, comfortable yet still challenging, and has proved to be quite effective in getting basics down.
