For beginning students who are children, I start with Hal Leonards Essential Elements (or the Hal Leonard Guitar Method for guitar students) to build a strong foundation in reading music, proper technique, tone production, and fundamental skills. Once students have a solid grasp of the basics, I introduce age-appropriate solo repertoire to develop confidence and prepare them for their first recital performance. For beginning students (under the age of 10), I will typically start with Alfred's Basic Guitar Method. This method, and other methods similar to this are great for teaching young students the fundamentals of music and provide insight on proper playing technique; but do so without becoming too overly technical.
