For the beginner who is 11 or younger, I start with John Thompson's Piano Courses to make sure the student familiar with all necessary elements of music. Then I will introduce some music that helps developing fingers appropriately and beautiful at the same time, such as Lemoine and Burgnlueller. Lessons should be positive experiences where students are nurtured and encouraged so that they look forward to their lessons. I like students to keep a practice notebook which we fill out during the lesson. Rather than being required to practice for a set number of minutes per day, we instead keep track of how many times an exercise or song is practiced.
