I would say I focus on the fundamentals, embouchure, tone, air, technique, and etc. Having a strong basic will get the students to play anything they want in the long term. For example, having a strong correct embouchure is really important in playing the clarinet. Piano: I use most beginning methods, including Alfred, Bastien, Piano Adventures (Faber), and other standard piano methods.
