Depending on the age and personality, I cater each lesson to the individual. If they are younger students, I'll use Mel Bay or Hal Leonard books, but sometimes I will make a custom book that builds with their development and learning style. For beginning piano students I typically start with Faber's piano adventure series--I typically have students work through the lesson, performance, and theory books while providing them with additional repertoire on the side (pop, disney, classical pieces etc.) For voice students, I typically spend about a third of the lesson working on technique--proper breathing, posture, extending range, working on tone quality etc. Then the rest of the lesson is spent working on solo song repertoire. I am full of energy and love learning as much as I can, but I also understand that full and in depth skill requires time and a certain level of patience and consistency. I relay this to students by repetition (specifically of principles), though I keep it fun and exciting by varying the application. Once the principle is fully grasped, we move on.
